Docs: catalog count 275 / 291 in the roadmap and parity summaries

The catalog went from 274 / 290 to 275 / 291 with View › Macros › Record Macro, and
parity-checklist.md says so, but the ROADMAP.md headline, ui-parity.md and target-app-parity.md
still said 274 / 290 (and 290 catalog ids). They now match, with revision rows.
